  1. Make ready 114 gm Dark Compound/Chocolate

  4. Place milk and butter into a small saucepan (sufuria) over medium heat. Cook for 2-3 minutes, stirring occasionally, until butter has melted completely.
  5. Increase heat to medium-high and allow mixture to cook another couple of minutes until you see tiny bubbles around the edge of the saucepan. DO NOT ALLOW THE IT TO BOIL OTHERWISE IT WILL BURN!!
  6. Pour the hot milk into the bowl of chocolate and allow it to sit for 5 minutes, then stir until the chocolate has completely melted and the mixture is glossy and smooth.
  7. Once well mixed in, your garage is ready to use in icing cakes or topping even of Icecream and other sweet treats.

    1. It solidifies at room temperature. To use it, warm it in the bain marie.
    1. For good quality ganache use high quality chocolate

Additions can be made, such as oil or corn Chocolate to Cream Ratio. Ganache can be used as a glaze, sauce, filling, frosting, or to make truffles. In ganache recipes, you can usually substitute milk chocolate for dark chocolate. Chocolate ganache, that amazing chocolate concoction we use for everything from truffles to glazes and layer cakes, is a simple enough thing. Important: I don't advise making ganache with white or milk chocolate.
