To make your potato salad really festive, use a combination of small red, gold and purple potatoes and leave their skins on. Cut them to size before adding the other ingredients. The added colors make a beautiful presentation for what otherwise is a rather bland colored salad. The other ingredients will depend upon your personal tastes.

  1. Wash potatoes. Place with eggs in large pot cover with water. Bring to boil. Boil until potatoes are fork tender.
  2. Remove potatoes from pan. Scrape off skin. Cut into quarters, then 1" pieces. Peel eggs, slice or dice.
  3. Put all ingredients in a large bowl. Mix together. Add salt and pepper to taste. If not wet enough add miracle whip / mayo a tablespoon at a time until the consistency you like.
  4. Refrigerate a couple of hours for cooling and flavors to meld.
  5. Actually makes about 5 cups following the recipe.

Pour water in a pot, add salt and bring to a boil. Drain potato in a colander and unshell eggs, then chop. Combine gently the potato, eggs, Grace Mixed Vegetables, Grace Whole Kernel Corn, escallion and sweet peppers, set aside to cool.
