  2. Stir-fry garlic with 1 tsp of oil. After about 30 seconds, add cut asparagus, then mushrooms. Stir for a while.
  3. After a couple of minutes or so, add the cornstarch mixture. If the mixture is too thick, add more water. Add crushed black pepper. Stir now and then. If the mixture is a bit bubbly, then it is done.
  4. Pour the sauce over the fried tofu and serve.

When oil is shimmering again, add tofu mixture and arrange in a single layer in skillet. Combine sugar, vinegar, soy sauce, ginger, and chili sauce in a small bowl. Add mushrooms to the pan, and stir-fry three to four minutes, until just tender and moist. Add the remaining tablespoon of oil, and stir in the garlic, ginger and asparagus.
