Boil pasta in large pot of water to al dente stage according to directions on package. Heat oil in heavy medium skillet over medium-high heat. The cooking time on the package of pasta is only a guideline. Combine the mascarpone, half and half and nutmeg in a bowl. Place pasta in large pot and set over low heat.
